Muesli is a cold porridge of oats, fruit and milk or yogurt that can be eaten immediately, or can be left to soften in the fridge overnight. However, don’t be fooled by this humble dish. Coconut-Green Apple Muesli

Ingredients

  • 1 1/2 cups (368g) plain 0% Greek yogurt
  • 1/2 cup (122g) unsweetened coconut milk
  • ¼ cup (62g) freshly squeezed orange juice
  • 2 tbsp light honey or maple syrup
  • ¼ tsp ground cinnamon
  • ⅛ tsp kosher salt
  • 1 cup (80g) rolled oats
  • ½ cup (46g) sliced almonds, roasted and unsalted
  • ½ cup (59g) pepitas, roasted and unsalted
  • 1/2 cup (21g) shredded unsweetened coconut
  • 1 large Granny Smith apple, cored and shredded

Optional garnishes

  • Ground cinnamon, for sprinkling
  • Honey or maple syrup, for drizzling
  • Toasted shredded coconut
  • Shredded apple
  • Toasted chopped nuts, such as almonds, hazelnuts or walnuts

Directions

In a medium bowl, whisk the yogurt and milk with the orange juice, honey, cinnamon and salt. Fold in the oats, almonds, pepitas, coconut and apple until thoroughly combined. Scrape the muesli into four 1-cup jars with tight-fitting lids. Refrigerate at least 1 hour, preferably overnight.

Eat right out of the jar, garnished with cinnamon, honey, toasted coconut, shredded apple or toasted nuts, if desired.

Crispy Air-Fried Tofu Bowls

Crispy Air-Fried Tofu Bowls

Ingredients

  • 1 (16-oz./453g) package water-packed extra-firm tofu
  • 1 tbsp toasted sesame oil
  • 2 tsp cornstarch
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • Cooking spray
  • 2 2/3 cups (280g) frozen brown rice
  • 1 cup (120g) English cucumber, thinly sliced
  • 1 medium (150g) avocado, thinly sliced
  • 1/4 cup (25g) green onions, thinly sliced
  • 1/4 cup (60g) sweet chili sauce
  • 2 tbsp unseasoned rice vinegar

Directions

Cut the tofu into 1-inch slices and arrange on a double layer of paper towels. Top with another double layer of paper towels, place a plate on top, and weigh it down with a heavy skillet. Let stand for 15 minutes to drain excess moisture. 

Remove the weight and paper towels, then cut the tofu into 1-inch cubes and transfer to a medium bowl. Drizzle with sesame oil and sprinkle with cornstarch, garlic powder, and salt; toss gently to coat.

Preheat the air fryer, if necessary, to 400°F (200°C). Coat the air-fryer basket with cooking spray and arrange the tofu in as even a layer as possible (cook in batches if needed). Air-fry for 15–20 minutes, or until browned and crisp, pausing every 5 minutes to shake the basket and toss the tofu.

Meanwhile, prepare the rice according to package directions. Divide about 2/3 cup rice among 4 bowls and top each with cucumber, avocado, and green onions. Divide the tofu evenly among the bowls. In a small bowl, whisk together the sweet chili sauce and rice vinegar. Drizzle evenly over each bowl before serving.

Neapolitan Nice Cream Pops

Ingredients

  • 1 cup (135g) raw cashew pieces
  • 1 (13.5 oz./398ml) can full fat coconut milk
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 8 large strawberries, fresh or frozen
  • 2 tbsp unsweetened cocoa powder
  • 1 pinch salt
  • 6 craft sticks

Directions

Place the cashews in a medium bowl and cover with hot tap water. Let soak for about 2 hours, or until softened. Drain and transfer the cashews to a blender along with the coconut milk, maple syrup, and vanilla extract. Blend until completely smooth.

Spoon 2 tbsp of the mixture into each of 6 (1/2-cup/118ml) popsicle molds and freeze upright until firm, about 2 hours.

Pour half of the remaining mixture into a measuring cup with a spout. Whisk in the cocoa powder until smooth, then cover and refrigerate. Add the strawberries to the remaining mixture in the blender and blend until smooth. Cover and refrigerate until needed.

Once the first layer is firm, pour the strawberry mixture evenly among the molds. Freeze for about 2 hours, or until firm.

Pour the chocolate mixture evenly over the strawberry layer and freeze for about 2 hours more, or until firm.

To unmold, run the molds under warm water until the edges loosen and the pops release easily. Serve immediately or store in a zip-top freezer bag for up to 2 months.

Ingredients

  • 1 tbsp olive oil

  • 2 14.5-oz. cans no-salt-added diced tomatoes, one can drained of liquid
  • 2 15-oz. cans low-sodium chickpeas, rinsed and drained

  • 3 cups hot cooked quinoa
  • 2 tbsp cilantro, chopped

Directions

Set the Instant Pot to sauté and allow it to preheat for 2 minutes. Add the olive oil and swirl to coat. Add the onion and garlic and sauté for 4 minutes. Stir in the garam masala and cayenne pepper and cook, stirring constantly, for about 30 seconds, or until fragrant.

Drain the juice from one can of tomatoes. Stir both cans of tomatoes into the pot along with the chickpeas and salt.

Cover and lock the lid, setting the steam valve to sealing. Cook on high pressure for 10 minutes (the pot will take about 15–20 minutes to come to pressure).

When cooking is complete, carefully quick-release the pressure by turning the steam valve to venting. Remove the lid and stir in the coconut milk.

Serve the chickpea mixture over the cooked quinoa and garnish with cilantro, if desired.

Directions

Open the can of coconut milk and poke a hole through the solid coconut cream in the top of the can. Pour off the liquid coconut water in the bottom of the can and reserve for smoothies.

Put 1 cup of the solid coconut cream in a mixing bowl. Add the sugar and salt and beat with a hand mixer on high until smooth and fluffy, 2 minutes. Set aside 2 tablespoons of the whipped coconut cream in a small bowl. Sift the cocoa powder over the remaining coconut cream, add the almond extract, and beat until incorporated and fluffy.

Spoon the mousse into 4 small (1/2-cup/118ml) ramekins. Dollop the reserved plain coconut whipped cream on top of each mousse and refrigerate.

In a small, dry saucepan, toast the almonds and coconut flakes over medium-low heat, stirring constantly, until golden brown, 1 minute. Sprinkle the mousse with the almonds and coconut immediately before serving.

Directions

To make the oatmeal jar, layer the ingredients in the following order: oats, salt, cinnamon, cranberries, and almond slivers. Make as many jars as desired and store in a dry area. If you do not have mason jars, oatmeal packets can also be made using zip-lock bags. Label with the date to help track freshness.

To cook the oatmeal with boiling water, bring 1 cup water to a rolling boil. Pour the water into the oatmeal jar and stir. Let the oatmeal stand for 4–5 minutes to soften, then stir and enjoy.

To cook the oatmeal in the microwave, pour the oatmeal into a microwave-safe container large enough to allow bubbling without spilling, then add 1 cup water. Microwave on power level 7 for 2 minutes.

Raspberry Chia Pudding with Almond Milk and Flax Crisps

Ingredients

  • 1 1/2 cups (366g) almond milk
  • 1/2 cup (84g) chia seeds
  • 2 tbsp pure maple syrup, divided
  • 1 1.25-oz package freeze dried raspberries
  • 1/4 cup (42g) whole flaxseeds
  • 1/4 cup (28g) ground flaxseeds
  • 1 tsp cinnamon
  • 1 large egg white
  • 2 tsp water
  • 1 cup (150g) fresh raspberries

Directions

The night before, in a 2–3 cup (480–720ml) storage container, combine the almond milk, chia seeds and 1 tbsp maple syrup and stir vigorously for a few seconds. In a blender or food processor, blitz the freeze-dried raspberries into a fine powder. Add the raspberry powder to the chia seed mixture and stir to combine. Cover and place in the refrigerator for at least 6 hours or overnight.

Preheat the oven to 350ºF (175ºC). Line a sheet pan with parchment paper and reserve. In a medium bowl, combine the whole and ground flaxseeds and cinnamon, whisking to mix. Add 1 tbsp maple syrup, egg white, 2 tsp water and stir thoroughly. Let stand for 2–3 minutes. It will thicken slightly. Spread the mixture on the parchment paper to a thickness of about 1/4 inch. Bake for 13-14 minutes, until dry and crisped. It will become firmer as it cools.

Cool on a rack and break into bite-sized pieces.

Serve pudding, topped with raspberries and crisps.

Makes 2 cups pudding and 1 3/4 cups crisps

Vegan Cinnamon-Apple Baked Oatmeal

Ingredients

  • 2 1/2 cups old-fashioned oats
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cups unsweetened soy milk
  • 2 sweet apples, grated and unpeeled (such as Honeycrisp)
  • 2 tbsp maple syrup
  • 1 1/2 tsp vanilla extract
  • 1/2 cup walnuts, chopped
  • 2 cups strawberries, sliced
  • 1 cup raspberries
  • 1 cup blackberries

Directions

Preheat the oven to 375°F (190°C) and lightly coat an 11-by-7-inch glass baking dish with cooking spray.

In a large bowl, combine the oats, cinnamon, baking powder, and salt. Add the soy milk, grated apple, maple syrup, and vanilla extract, and stir until well mixed. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the chopped walnuts over the top. Bake for about 35 minutes, or until the oatmeal is set and lightly golden. 

Meanwhile, in a small bowl, gently combine the strawberries, raspberries, and blackberries. Store in an airtight container.

Let stand for 5–10 minutes before cutting into six pieces. Let cool completely, then store each piece in an airtight container for easy transport. 

To reheat, place in the microwave for 60-90 seconds, or until hot. Top cold berry mixture and enjoy.

Oats Masala Pancakes

Ingredients

  • 1 cup oat flour
  • 3 tbsp chickpea flour (besan)
  • 1 1/2 cups water
  • 1 tsp dry fenugreek leaves (kasoori methi)
  • 1 small (50g) onion, very finely chopped
  • 1 small (50g) tomato, very finely chopped
  • 1–2 green chilies, deseeded and very finely chopped
  • 1 tbsp (15g) fresh cilantro, chopped
  • 1/2 tsp salt
  • 1/2 tsp garam masala
  • 1/4 tsp turmeric (haldi)

Directions

Combine the oats, gram flour, water, dry fenugreek leaves, onion, tomato, green chilies, coriander, salt, garam masala, and turmeric in a large bowl. Whisk well until smooth, adding additional water if needed to create a pourable batter.

Heat a lightly greased nonstick skillet or griddle over medium heat. Pour a small ladleful of batter onto the pan and spread gently into a thin pancake.

Cook for about 2 minutes, or until the edges begin to brown lightly. Flip and cook on the other side until cooked through and lightly browned.

Repeat with the remaining batter. Serve hot with mint chutney, if desired.

Instant Pot Minestrone

Ingredients

  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 1 large carrot, chopped
  • 1 celery stalk, thinly sliced
  • 1/2 cup (45g) chopped fennel bulb
  • 3 garlic cloves, chopped
  • 1/4 cup (60g) dry white wine
  • 4 cups low-sodium vegetable broth
  • 1 1/2 cups (360g) canned diced no-salt added tomatoes with juice
  • 1 1/2 cups (150g) cauliflower florets (2-inch/5cm) 
  • 1 small zucchini, diced
  • 1 (15-oz.) can low-sodium kidney beans, rinsed and drained
  • 1/3 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup (50g) protein-plus chickpea elbow pasta, cooked according to package instructions
  • 1/4 cup (65g) pesto

Directions

Put the oil in the Instant Pot, select sauté, and adjust to high heat. Add the onion, carrot, celery, and fennel and cook, stirring occasionally, until the vegetables begin to soften, about 4 minutes. Add the garlic and cook until fragrant, about 45 seconds.

Add the wine and simmer, scraping up any browned bits from the bottom of the pot, until nearly evaporated, about 1 minute. Press cancel. Add the broth, tomatoes, and cauliflower. Lock the lid and turn the valve to sealing. Select pressure cook, adjust to high pressure, and set the timer for 5 minutes. When the cook time is complete, turn the valve to venting to quickly release the pressure.

Carefully unlock the lid and stir in the zucchini, beans, salt, and pepper. Select sauté and adjust to medium heat. Cover with a regular pan lid and simmer until the zucchini is just cooked, about 10 minutes. Stir in the pasta.

Ladle into bowls and garnish each serving with 1 tbsp pesto. Cool leftovers and store in an airtight container in the refrigerator for up to 5 days.

Kale and Black Bean Salad With Avocado

Ingredients

  • 1/4 cup (44g) dried black beans, soaked
  • 2 cups (50g) kale, chopped
  • 1 tbsp avocado oil
  • 1 tbsp lime juice, freshly squeezed
  • 1 garlic clove, minced
  • 1 tsp ground cumin
  • 1/4 tsp salt
  • 1 large tomato, diced
  • 1 medium avocado, cubed

Directions

In a small saucepan, combine the soaked black beans with 2 cups of water and bring to a boil over medium-high heat. Reduce the heat to a gentle simmer, leaving the lid slightly ajar, and cook until the beans are tender, about 1 hour. Drain, rinse lightly, and let cool.

Place the chopped kale in a large bowl. In a small bowl, whisk together the avocado oil, lime juice, garlic, cumin, and salt. Pour the dressing over the kale and toss to coat, then use your hands to massage the kale for about 1 minute, until it softens and darkens slightly.

Add the cooked beans, tomato, and avocado, and toss gently to combine. Serve immediately to prevent the avocado from browning.
