This sheet pan greek salmon has everything — tender, flaky fish with a herby lemon crust, caramelized chickpeas and cauliflower, and a cool garlicky tzatziki that pulls it all together. Greek-inspired flavors, one pan, minimal cleanup.

Sheet Pan Greek Salmon With Chickpeas

Ingredients

  • Cooking spray
  • 4 (5 oz/142g) salmon fillets, skin-on
  • 1 (15 oz/250g) can low-sodium chickpeas, drained and rinsed
  • 4 cups (425g) cauliflower florets
  • 1 tbsp olive oil
  • 1 tsp dried oregano, divided
  • 1 tsp ground cumin
  • 1/2 tsp sweet paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon zest (from about 1 large lemon)
  • 2 garlic cloves, minced, divided
  • 1/2 cup (115g) plain nonfat Greek yogurt
  • 1/4 medium cucumber, peeled, grated and squeezed dry (about 3 tbsp)
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • 1/4 cup (35g) kalamata olives, rinsed, pitted and halved 

Directions 

Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with foil and coat with cooking spray.

In a large bowl, toss the chickpeas and cauliflower with the olive oil, 1/2 tsp of the oregano, cumin, paprika, salt, and pepper. Spread in a single layer on the prepared baking sheet and roast for 15 minutes.

Meanwhile, in a small bowl, stir together, remaining 1/2 tsp oregano, lemon zest, and 1 of the minced garlic cloves. Push the chickpeas and cauliflower to the edges of the pan and arrange the salmon fillets skin-side down in the center. Spread the lemon-oregano mixture evenly over the top of each fillet. Scatter the olives over the chickpeas and cauliflower.

Return the pan to the oven and roast for 12–15 minutes, or until the salmon registers 145°F (63°C) on an instant-read thermometer and the cauliflower is tender and lightly charred.

In a small bowl, stir together the Greek yogurt, grated cucumber, lemon juice, dill, and remaining minced garlic clove to make the tzatziki. Drizzle over the salmon and vegetables and serve immediately.

Ingredients

  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups (200g) Brussels sprouts, trimmed and halved
  • 2 medium sweet potatoes (about 500g total), peeled and cut into 1-inch cubes
  • 4 bone-in, skin-on chicken thighs (about 1 1/2 lb/680g)

Directions

Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with foil and coat with cooking spray. In a small bowl, whisk together the maple syrup, Dijon mustard, garlic, and thyme; set aside. In a large bowl, toss the Brussels sprouts and sweet potatoes with the olive oil, salt, and pepper, then spread in a single layer on the prepared baking sheet. Arrange the chicken thighs skin-side up on top of the vegetables and brush generously with the maple-Dijon glaze. 

Roast for 30–35 minutes, or until the chicken registers 165°F (74°C) on an instant-read thermometer and the vegetables are tender and caramelized. Let rest for 5 minutes before serving.

Sheet Pan Miso Salmon With Baby Bok Choy

Ingredients

  • Cooking spray
  • 4 (5-oz./142g) salmon fillets, skin-on
  • 3 tbsp mayonnaise
  • 1 tbsp white miso paste
  • 1 tsp lemon zest, finely grated
  • 1 tsp lemon juice
  • 1/2 cup (42g) whole-wheat panko crumbs
  • 4 small baby bok choy, halved lengthwise (quartered if larger)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions

Preheat the oven to 450°F (232°C). Line a rimmed baking sheet with foil and coat generously with cooking spray. Using tweezers or needle-nose pliers, remove any pin bones from the salmon fillets. Arrange the fillets skin-side down in the center of the prepared baking sheet.

In a small bowl, stir together the mayonnaise, miso paste, lemon zest, and lemon juice until smooth. Spread the mixture evenly over the top of each fillet, then gently press the panko crumbs onto the surface so they adhere.

In a medium bowl, toss the bok choy with the oil until evenly coated. Scatter the vegetables around the salmon and season with the salt and pepper. Roast, rotating the pan once halfway through, until the salmon is cooked through to an internal temperature of 145°F, about 12–15 minutes.

To serve, slide a spatula gently between the flesh and skin of each fillet — the skin should release easily from the foil. Transfer to plates, discarding the skin, and serve immediately.

 Sheet Pan Ginger-Soy Tofu

 Ingredients

  • 2 14 oz (396g) blocks extra-firm tofu, drained and pressed for at least 30 minutes (or up to overnight)
  • 3 tbsp reduced-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, peeled and finely grated
  • 2 garlic cloves, minced
  • 1 tbsp honey or maple syrup
  • 1 tsp Sriracha (optional)
  • 4 cups (285g) broccoli florets
  • 1 cup (155g) shelled edamame
  • 1 tbsp sesame seeds
  • 2 medium green onions, thinly sliced
  • 2 cups (400g) cooked brown rice, for serving

Directions

To press the tofu: Wrap each block in a clean kitchen towel or several layers of paper towels and place on a flat surface. Set a heavy pan or cutting board on top and let stand for at least 30 minutes to remove excess moisture. For best results, press overnight in the refrigerator.  

Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with foil and coat generously with cooking spray. Cut the tofu into 1-inch cubes and pat thoroughly dry with paper towels — the drier the tofu, the crispier it will become in the oven.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, ginger, garlic, honey, and Sriracha, if using. Pour half of the sauce into a large bowl, add the tofu, and toss gently to coat. Spread the tofu in a single layer on the prepared baking sheet and roast for 15 minutes. Flip the tofu and push it to one side of the pan. Add the broccoli and edamame to the other side and drizzle with the remaining sauce, tossing to coat. Spread everything in a single layer and return to the oven for 12–15 minutes, or until the tofu is golden and crispy and the broccoli is tender and lightly charred.

Divide the brown rice among four bowls. Top with the tofu, broccoli, and edamame. Garnish with sesame seeds and green onions and serve immediately.

Directions

 Preheat the oven to 425°F (220°C). Arrange the tortillas on a sheet pan and bake until lightly browned, 2–4 minutes. Remove the pan from the oven.

Carefully flip the tortillas. Spread 1/4 cup marinara over each tortilla and sprinkle each with crushed red pepper. Top each with ½ cup shredded chicken. Arrange 1 cup spinach on each tortilla and sprinkle 1/3 cup mozzarella over each.

Bake until the cheese is melted and bubbly, about 5–7 minutes.

Ingredients

  • 1 1/2 pounds (680g) boneless skinless chicken breast, cut into 1 ½ -inch pieces
  • 1 medium (590g) head cauliflower, trimmed into bite-size florets
  • 2 cups (312g) cherry tomatoes
  • 1/2 cup (70g) pitted green Castelvetrano olives (or any other large, mild green olive variety)
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 ¾ tsp sumac, divided
  • ½ tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 cup (123g) plain low-fat Greek yogurt
  • 1 small garlic clove, finely chopped and smashed with the side of a knife

Directions

Preheat the oven to 500°F (260ºC). Place a baking sheet on the center rack of the oven as it preheats. (Preheating the pan promotes faster browning and charring.)

In a large bowl, toss the chicken, cauliflower, cherry tomatoes and olives with the olive oil, lemon juice, salt, pepper, and 1 ½ tsp of sumac. Pour onto the hot baking sheet and carefully arrange in an even layer with a spatula (if desired, line the hot baking sheet with foil before adding the ingredients for easier cleanup.) Bake for 15 minutes, stirring once halfway through or until the chicken is no longer pink in the center (internal temperature of 165 degrees) and the cauliflower is tender and charred in places.

While the chicken is baking, make the sauce by combining the yogurt, garlic and remaining sumac in a small bowl. Serve the sheet-pan chicken and vegetables with the yogurt sauce on the side.

Serves: 4 | Serving Size: ¼ recipe, about 1 ½ cups chicken and veggies, plus 2 tbsp yogurt sauce

Sheet Pan Chocolate Chip Pancakes

Ingredients

  • Cooking spray
  • 1 cup (120g) whole-wheat pastry flour
  • 1 cup (85g) rolled oats
  • 1/2 cup (55g) unflavored whey protein powder
  • 1 ½  tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups (305g) low-fat milk or plant-based milk alternative
  • 2 large eggs
  • 1/4 cup (80g) maple syrup, divided
  • 1 ½  tsp vanilla extract
  • 2 tbsp melted coconut oil
  • 1/3 cup (56g) chocolate chips
  • 1 1/2 cups (230g) chopped strawberries

Directions

Preheat the oven to 425°F (220°C). Coat a 9-by-13-inch rimmed baking sheet with cooking spray. Place the flour, oats, whey powder, baking powder, and salt in a blender or food processor and blend until finely ground. Transfer to a large bowl.

Add the milk, eggs, 3 tbsp of the maple syrup, and the vanilla extract to a blender or food processor and blend until smooth. Add the wet ingredients to the dry ingredients and whisk until smooth (if the batter is too thick, you can thin it out with an additional 1-2 tbsp milk.) Stir in the oil.

 Pour the batter into the prepared baking sheet and sprinkle evenly with the chocolate chips. Bake until golden brown and a toothpick inserted in the center comes out clean, about 15 minutes.

While the pancake bakes, combine the strawberries and the remaining 1 tbsp maple syrup in a small saucepan. Bring to a simmer over medium heat, stirring frequently and mashing the berries with a wooden spoon until heated through. Keep warm over low heat.

Cut the pancake into 8 rectangles and serve with the strawberry sauce.

Sheet Pan Shrimp Fried Rice

Ingredients 

  • 2 tbsp (30g) safflower oil
  • 2 tbsp black bean garlic sauce
  • 3 medium garlic cloves, finely chopped
  • 1 tbsp fresh ginger, finely chopped
  • 1 tbsp low-sodium soy sauce
  • 3 cups (585g) cold cooked brown rice
  • 3 cups (170g) shiitake mushrooms, caps sliced, stems discarded
  • 2 celery stalks, thinly sliced
  • 1 large carrot, finely diced
  • 1 lb (454g) shrimp, peeled and deveined
  • 3/4 cup (115g) frozen peas
  • 2 green onions, thinly sliced
  • 1 large egg, beaten

Directions

Place a large, rimmed baking sheet in the center of the oven and preheat to 450°F (246°C).

In a large bowl, whisk together the oil, black bean garlic sauce, garlic, ginger, and soy sauce. Crumble the rice into the bowl. Add the mushrooms, celery, and carrots, and toss to combine. Carefully spread the mixture onto the preheated baking sheet in an even layer. Bake until the rice begins to brown in the corners of the pan, about 10 minutes.

Add the shrimp and peas to the rice mixture and stir with a spatula to loosen any stuck-on bits. Spread the mixture back into an even layer and continue baking until the shrimp are opaque and cooked through, about 5–6 minutes more (the shrimp should reach an internal temperature of 145°F/63°C).

Meanwhile, scramble the egg in a small nonstick skillet over medium heat until just set. Remove from heat. Stir the cooked egg into the rice mixture along with the green onions before serving.

Ingredients

  • 1 small head red cabbage, cut through the core into eight 1/2-inch thick wedges
  • 1 lb (453g) baby red potatoes, halved if large
  • 1 apple, such as Honeycrisp or Granny Smith, halved, cored and sliced 1/4-inch thick
  • 1 small yellow onion (125g), halved, peeled and cut through the root into 1/4-inch thick wedges
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp cumin or caraway seeds
  • 1/2 tsp yellow mustard seeds
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 4 precooked chicken-apple sausages
  • 1/4 cup parsley, roughly chopped

Directions:

Preheat the oven to 450°F (230°C) and line a large rimmed baking sheet with aluminum foil.

In a large bowl, gently toss the cabbage, potatoes, apple, onion, olive oil, apple cider vinegar, cumin, and mustard seeds. Season with salt and pepper. Spread the mixture in a single layer on the prepared baking sheet and roast for 15 minutes.

Remove the baking sheet from the oven and use a spatula to flip the vegetables and apples. Arrange the chicken sausages on top and return to the oven. Roast for about 10-12 minutes more, or until the sausages reach an internal temperature of 165°F and are browned and the cabbage is crisp-tender. Let cool for 5 minutes.

Garnish with parsley and serve immediately.

BBQ Chicken Pizza With Sweet Potato Crust

Ingredients

  • 1 lb (454g) sweet potato, peeled and cut into chunks
  • 1/2 cup plus 2 tbsp (62g) almond flour
  • 1/4 cup (37g) gluten-free flour
  • 1 large egg
  • 1/4 tsp salt
  • 1/4 cup low-sodium barbecue sauce
  • 1 cup (110g) part-skim mozzarella, grated
  • 1 1/2 cup (227g) boneless skinless chicken breast, cooked and diced
  • 1/4 small red red onion, very thinly sliced
  • 1/2 small red bell pepper, thinly sliced

Directions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside. Place the sweet potatoes in a microwave-safe bowl with 1/4 cup water. Cover and microwave until very tender when pierced with a fork, about 5 minutes. Drain well. Transfer to a large bowl and mash until completely smooth (you should have about 1.5 cups). Set aside and let cool to room temperature.

Add the almond flour, gluten-free flour, egg, and salt to the mashed sweet potatoes and stir to combine. Place the mixture on the prepared baking sheet and spread into a 10-by-8-by-1/2-inch (25 cm by 20 cm) rectangle using an offset spatula. Bake until the base is dry to the touch and beginning to brown on the edges, about 25 minutes.

Spread the barbecue sauce evenly over the pizza base. Top with the chicken, then arrange the onions and bell pepper evenly over the top. Sprinkle the cheese over everything. Bake until the cheese is bubbly and golden, about 10 minutes. Cut into squares and serve.
