Once baked, store in the refrigerator and simply reheat a piece each morning β€” 60-90 seconds in the microwave should do it. Then, top with fresh berries and enjoy a hearty, lightly sweetened, whole-grain breakfast.Β

Vegan Cinnamon-Apple Baked Oatmeal

Ingredients

  • 2 1/2 cups old-fashioned oats
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cups unsweetened soy milk
  • 2 sweet apples, grated and unpeeled (such as Honeycrisp)
  • 2 tbsp maple syrup
  • 1 1/2 tsp vanilla extract
  • 1/2 cup walnuts, chopped
  • 2 cups strawberries, sliced
  • 1 cup raspberries
  • 1 cup blackberries

Directions

Preheat the oven to 375Β°F (190Β°C) and lightly coat an 11-by-7-inch glass baking dish with cooking spray.

In a large bowl, combine the oats, cinnamon, baking powder, and salt. Add the soy milk, grated apple, maple syrup, and vanilla extract, and stir until well mixed. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the chopped walnuts over the top. Bake for about 35 minutes, or until the oatmeal is set and lightly golden.Β 

Meanwhile, in a small bowl, gently combine the strawberries, raspberries, and blackberries. Store in an airtight container.

Let stand for 5–10 minutes before cutting into six pieces. Let cool completely, then store each piece in an airtight container for easy transport.Β 

To reheat, place in the microwave for 60-90 seconds, or until hot. Top cold berry mixture and enjoy.

Muesli is a cold porridge of oats, fruit and milk or yogurt that can be eaten immediately, or can be left to soften in the fridge overnight. However, don’t be fooled by this humble dish. Something magical happens while the muesli sits in the fridge over time, turning the oats into a soft, creamy and satisfying breakfast.

Coconut-Green Apple Muesli

Ingredients

  • 1 1/2 cups (368g) plain 0% Greek yogurt
  • 1/2 cup (122g) unsweetened coconut milk
  • ΒΌ cup (62g) freshly squeezed orange juice
  • 2 tbsp light honey or maple syrup
  • ΒΌ tsp ground cinnamon
  • β…› tsp kosher salt
  • 1 cup (80g) rolled oats
  • Β½ cup (46g) sliced almonds, roasted and unsalted
  • Β½ cup (59g) pepitas, roasted and unsalted
  • 1/2 cup (21g) shredded unsweetened coconut
  • 1 large Granny Smith apple, cored and shredded

Optional garnishes

  • Ground cinnamon, for sprinkling
  • Honey or maple syrup, for drizzling
  • Toasted shredded coconut
  • Shredded apple
  • Toasted chopped nuts, such as almonds, hazelnuts or walnuts

Directions

In a medium bowl, whisk the yogurt and milk with the orange juice, honey, cinnamon and salt. Fold in the oats, almonds, pepitas, coconut and apple until thoroughly combined. Scrape the muesli into four 1-cup jars with tight-fitting lids. Refrigerate at least 1 hour, preferably overnight.

Eat right out of the jar, garnished with cinnamon, honey, toasted coconut, shredded apple or toasted nuts, if desired.

Millet is a chronically underappreciated grain, and it deserves a place on your table. The tiny yellow grains are gluten-free and have a neutral, sweet flavor that supports whatever seasonings you add to it. In this easy, make-ahead porridge, the grains fall apart to make it thick and creamy, with a hint of apple sweetness. Apples, cranberries and cinnamon give it a warming, wintry finish.

Millet Porridge With Cinnamon-Cranberry Apples

Ingredients

  • 1 cup (200g) millet
  • 1 cup water
  • 1 cup (240g) apple juice
  • 1 5.3-oz. (143g) container 0% Greek yogurt
  • 2 scoops whey protein powder (unflavored)
  • 1 large apple, chopped
  • 1/4 cup (40g) dried cranberries
  • 1/2 tsp cinnamon

Directions

Rinse the millet in a fine-mesh strainer and drain well. Place in a small pot and add 1 cup water and the apple juice. Bring to a boil over high heat, then cover and reduce the heat to low. Cook for about 30 minutes, stirring frequently, until the millet is tender and beginning to break down.

Remove from the heat and stir in the Greek yogurt and protein powder until a thick, creamy porridge forms. Keep warm.

In a small bowl, combine the apple, dried cranberries, and cinnamon and toss to coat.

Serve the porridge topped with the apple mixture.

Sheet Pan Sausage and Cabbage

This weeknight interpretation of the classic Alsatian dish is a hearty meal of sausage, cabbage and potatoes β€” and it’s perfect for fall. This version takes the whole dish and makes it happen on a sheet pan for ease. Be sure to use a rimmed baking sheet to prevent the ingredients from sliding off.

Sheet Pan Sausage Choucroute Garnie

Ingredients

  • 1 small head red cabbage, cut through the core into eight 1/2-inch thick wedges
  • 1 lb (453g) baby red potatoes, halved if large
  • 1 apple, such as Honeycrisp or Granny Smith, halved, cored and sliced 1/4-inch thick
  • 1 small yellow onion (125g), halved, peeled and cut through the root into 1/4-inch thick wedges
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp cumin or caraway seeds
  • 1/2 tsp yellow mustard seeds
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 4 precooked chicken-apple sausages
  • 1/4 cup parsley, roughly chopped

Directions:

Preheat the oven to 450Β°F (230Β°C) and line a large rimmed baking sheet with aluminum foil.

In a large bowl, gently toss the cabbage, potatoes, apple, onion, olive oil, apple cider vinegar, cumin, and mustard seeds. Season with salt and pepper. Spread the mixture in a single layer on the prepared baking sheet and roast for 15 minutes.

Remove the baking sheet from the oven and use a spatula to flip the vegetables and apples. Arrange the chicken sausages on top and return to the oven. Roast for about 10-12 minutes more, or until the sausages reach an internal temperature of 165Β°F and are browned and the cabbage is crisp-tender. Let cool for 5 minutes.

Garnish with parsley and serve immediately.
